Besides all the fun, poolside activities, our daily Grand Breakfast buffet in The Woodlands Dining Room is a top attraction for adults and kids alike.

It is called the Grand Breakfast for a reason, and it’s hard to decide where to start.

The exhibition kitchen serves up made-to-order omelets. Go all out and order your omelet with everything!

You can also order fluffy pancakes and Belgian waffles. I’m not sure what the secret is, but the waffles come out perfect every time. I have never been able to replicate those Woodlands Dining Room waffles at home. Normally, the batter oozes out of the waffle iron and onto the counter. Or worse, my waffle sticks to the iron like crazy glue.

But I digress. The warm syrup for the pancakes and waffles is absolutely amazing. Personally, I think we should bottle it and sell the stuff.

The Grand Breakfast doesn’t end there. There is a hot station with bacon, sausage, biscuits and gravy (the best!), scrambled eggs, and breakfast potatoes. A cold display features a variety of yogurts, cereals, granola, and fresh fruits. Plus, there are freshmade pastries such as croissants and danishes to choose from. Or, toast your own bagel, English muffin and sliced bread.

New Dining Spots In The Woodlands

Two new dining options, La Guadalupana Mexican Cuisine & Bar and Luca & Leonardo Ristorante, are opening in December just in time for hungry holiday shoppers.

La Guadalupana will feature typical Mexican dishes such as tacos, enchiladas and fajitas. One of the highlights of the new restaurant is a Tequila “museum” with 200 types of tequila. Margaritas anyone? You’ll find homemade tortillas and fresh tableside salsa mixed-to-order. The restaurant plans to stay open late Thursday, Friday and Saturday nights when it hosts live music entertainment. A lower level, outdoor terrace is planned which will be perfect for alfresco dining in the Spring.

At Luca & Leonardo Ristorante, guests will enjoy a selection of wines and a traditional Italian fare. It too will have outdoor seating overlooking The Woodlands Waterway®.

You know those days when you get the mean reds? It's like having the blues ... only worse. Well as Holly Golightly points out, the only cure for the mean reads is to head to Tiffany’s. Lucky for us, the good folks at Tiffany & Co. have selected Market Street – The Woodlands for their second Houston location which is expected to open in November.

The new 4,000-square-foot store will occupy the space previously leased by Z Gallerie, which relocated to another location within Market Street, and will showcase the prestigious jeweler’s collection of engagement rings, diamonds, watches, men’s items, accessories and gifts. Of course, your jewels are presented in the treasured Tiffany Blue Box®.

Did you know the blue box is a retail tradition that dates back to founder Charles Tiffany? He mandated that the coveted boxes could only be acquired with a Tiffany purchase.

Denim Works of Art

In Texas, we love our jeans. We wear jeans year-round … even in the middle of August. Last week I was on the hunt for the perfect pair and stopped by Tattu Denim by Design at Market Street. As soon as I stepped through the doors to see iron chandeliers, leopard-print rugs and ornate mirrors I knew I was in for an experience.

Here’s the blue print. At Tattu, you get the option of picking different washes, distressing and accessories like Swarovski crystals in a variety of colors to create a one-of-a-kind pair of jeans. The denim is even sourced from Milan, Italy. Très chic!

So I grabbed a dark wash jean in my size and was ushered over to discuss the fit with the Tattu tailor. Did I want skinny, straight, boot cut? She pinned up the sides and the appropriate length to give me a custom fit, skinny jean. So far so good.

Now for the fun stuff! I sat in a lounge-like area with a consultant to go over design options. In addition to crystals, there are metal studs, leather and custom stitching options available. I was starting to feel the pressure of designing my very own pair of high-end jeans. Luckily, Tattu uses a software program to show customers the various materials to build a pair and see the finished product on a flat-screen television. For more inspiration, I looked over some examples of finished pockets with a variety of embellishments.

I ended up selecting a few studs and Swarovski crystals for my new jeans. Surprisingly, they were ready in two days. (Jeans without embellishments are ready within a couple of hours). A basic pair with custom tailoring starts at $140. Mine were $250. Sporting a one-of-a-kind pair of haute couture jeans … priceless!

Eat Like a King at 1252 Tapas

It’s no secret that Houstonians love to eat. In fact, it’s been said that we eat out more than any other US city. When beautiful Spring weather comes our way there’s no better way to enjoy it than relaxing on an outdoor patio with good food and a cool drink.

On a recent Thursday evening, I strolled into 1252 Tapas, which opened recently at Market Street between Cru wine bar and Sunglass Hut. 1252 is an airy restaurant whose name represents the year of King Alfonso X’s coronation. There are a few couches for lounging, tables for dining and a full bar with conversation table.

Choosing a seat on the outdoor patio overlooking Central Park, I sipped on a glass of Malbec while reviewing the menu options – a selection of hot and cold tapas.

Several items caught my attention including the house cured and smoked salmon with goat cheese, asturian fava bean stew and the roasted piquillo peppers stuffed with tetilla cheese. My friendly waiter recommended the tabla 1252, a selection of cold cuts and cheeses.

I opted for a cup of refreshing gazpacho that I paired with lentil salad mixed with tomatoes and cabrales cheese. Both items were outstanding in flavor, freshness and portion size.

Then the sautéed shrimp in garlic and olive oil were delivered to the table in a mini cast-iron skillet as well as the chaminones y setas al ajillo – organic mixed mushrooms sautéed with garlic and parsley. The tasty mushrooms were served in the cutest little Le Cruset-style pot!

1252 is a great addition to Market Street – perfect for a shopping break or early evening snack. I’ll definitely be going back to 1252 for another Malbec and that cheese sampler!

Roasted Corn and Butternut Squash Chowder

½ c. Onion – chopped
½ c. Celery
½ c. Leeks
2 Tbs. Butter
1 c. Roasted Corn
¼ c. Roasted Anaheim Peppers – peeled & diced
2 Tbs. Flour
⅛ tsp. Cinnamon
2 c. Chicken Broth
1 c. Heavy Cream
1 c. Butternut Squash – small dice
Sea Salt – to taste
½ tsp. Black Pepper

In a 4 quart pot on medium heat, sauté onion, celery and leeks in butter until tender. Add corn and pepper. Sauté for 2 minutes, add flour and cinnamon. Stir until flour is well mixed and begins to stick on bottom of pan. Add chicken stock and cream. Bring to a boil, gently stirring. Add squash and simmer for 10 minutes. Season with salt & pepper.

Dr. Pepper Pork

Did you know that the oldest Dr. Pepper plant in the world is right here in Texas? Check out the Dublin Dr. Pepper Plant. Oddly enough, I lived in Dublin, TX for a short stint in elementary school. Can't remember if I went to the plant or not though.

Ingredients
1 each Pork tenderloin
¼ cup Flour
2 tablespoon Vegetable oil
12 ounces Dr Pepper
1 cup Dried fig – dice
1 cup Onion – medium dice
Salt
Pepper

Directions
Preheat skillet on medium heat. Season whole pork tenderloin generously with salt & pepper. Dust in flour to completely coat. Add oil to skillet; then add meat. Sear for several minutes on each side to brown evenly. Reduce heat to medium. Add onions & fig. Saute until soft. Add Dr. Pepper. Cook until liquid has reduced by ¾ and is slightly thick. Remove pork loin and allow to rest for 10 minutes. Slice and serve with pan sauce.

Get a Grip

The grip is the most important fundamental in golf. Your hands are the only connection you have to the club, which makes contact with the ball. In order to consistently hit good shots, your hands have to be placed on the grip so they compliment each other and work together.

There are three basic grip options: (1) ten-finger (sometimes called the "baseball" grip), (2) interlock, and (3) overlap. The overlap is the most commonly used grip.

The ten-finger grip is best for players with very small hands, such as some ladies and junior players. The interlock grip is used a lot by players with medium hand size, but some players with large hands also prefer it. The little finger on your right hand interlocks with the index finger on the left hand (for a right handed golfer). The overlap, or "Vardon grip" is used by a large number of players worldwide. The little finger of your right hand overlaps into the gap between your index finger and middle knuckle on your left hand (for a right handed golfer).

The proper way to place your hands on the club is to let your left arm hang down naturally from your shoulder. Place your fingers on the grip as if you were picking up a suitcase. As you can see, most of the grip is in the fingers. Peggy Kirk Bell, LPGA Hall of Famer, believes this is the easiest way to get your left hand on the club properly. You will notice that the line formed by your thumb and index finger points in the general direction of your right shoulder. That same line on your right hand will be between the shoulder and your chin. The grip will vary a little from player to player, some will see two knuckles, some three on the back of their left hand.

As you work to improve your grip, make sure you don't grip the club too tightly as this will create tension in your arms and hands, restricting the proper release of the clubhead. Proper grip pressure is very important in the timing of the release through the ball.

Happy Travels in 2010

We’ve all been dealing with air travel delays, increased security measures and baggage restrictions since 2001.  If you’re like me, you adjusted long ago.  You really do arrive to the airport an hour early.  You aren’t disappointed when you see long lines at security.  You have a stockpile of mini shampoos and conditioners and other toiletry items around the house.  (Is it just me, or do memories of classic vacations in the old family van, driving for hours on the highway, and stopping at rest-areas for lunch not seem as bad as you once remember?)

Let’s face it, many headaches that come with air travel are for passenger safety and are performed properly.  Other rules and restrictions just make you scratch your head and ask “why?”

In the interest of good fun, whether it’s the seat belt demonstration you’ve heard repeated for at least a thousand times, or no water bottles allowed through security, what are your air travel pet peeves?

It’s That Time: Resolutions

It's that time again - time to get out the paper and pen (or computer) and write down that list of things you want to change in 2010.  From losing weight to changing your outlook on life, resolutions can be good and bad for you.  Here's some tips on how to make the most of it.

How to Avoid the Pitfalls of New Year’s Resolutions
It has been reported that 40-45 percent of Americans make New Year’s resolutions. What is the failure rate you ask? More than 85 percent. So if you want to make a resolution to better yourself and avoid the traps that will land you on the losing end, follow these five simple steps:

1-Don’t make broad reaching resolutions.
Big picture resolutions, such as lose weight or save money, are doomed to fail from the beginning. What does “save money” look like anyway? By setting a more specific goal you set yourself up for success.

2-Not having a strategic plan.
A well-thought-out, strategic plan followed up with action, discipline and accountability will increase your ability to succeed. Write down your goals and use a calendar or journal to track your progress.

3-Don’t set your sights on achieving your goal in one year.
Experts say it takes 21 days of doing something consistently to become a habit so set your first deadline at four weeks. Once you reach the four-week mark, continue your resolution for another four weeks. By creating short-term deadlines, rather than trying to reach your goal in 12 months, your resolution becomes more attainable. You always see the light at the end of the tunnel so to speak. 

4-Don’t set unrealistic expectations.
If you don’t currently have an exercise routine in place, it would be unrealistic to set a goal to be at the gym 5 days a week. Your goals should be just out of reach, but not out of sight!

5-Don’t give up too quickly and ask for help.
The average resolution lasts three weeks because people are too quick to quit if they have a slip-up. Just because you smoke one cigarette doesn’t mean your entire resolution is ruined. Review your strategic plan and recommit yourself. If, after a month of working to achieve your goal, you have made little or no progress, it is time to ask for assistance. Rather than give up, find someone to hold you accountable.

Personally, resolutions have never been my thing.  Not sure if that's because I'm lazy or if I just never really get around to making a list. Maybe I should add "making resolutions" to my non-existent list.

Cynthia Woods Mitchell

Cynthia Woods Mitchell, the namesake of the Cynthia Woods Mitchell Pavilion and wife of The Woodlands founder, George Mitchell, passed away this weekend at the age of 87. Cynthia Mitchell had a wide range of interests, supported many causes and was passionate about the environment. She served on the board of the World Wildlife Fun and was a benefactor of the Houston Symphony, Houston Ballet and Houston Grand Opera.

Raised raised by a single mother in New York City, Cynthia and her twin sister moved to Houston in 1939. Interestingly, Cynthia and George met on a train which was traveling to College Station from Houston. They married on Halloween and together raised ten children.

Those who knew Cynthia describe her as being "totally original and hilariously funny."

To honor Cynthia Woods Mitchell, the Houston Symphony is scheduled to play a special concert on April 29 at the Pavilion bearing her name.

When I first started working at The Woodlands Resort almost 10 years ago, my desk was in view of our main drive. I remember watching Mr. Mitchell pull his car up and park in the drive every weekday morning. He would get out slowly, walk around the car and tenderly help his wife from the car. They would slowly make their way to The Woodlands Dining Room for breakfast. An hour or two later, I would see him tenderly help his wife into the car and away they would go. He came every single morning. At one point, I heard that Cynthia was ill and unable to make it out of bed. He still came, but he was in and out much quicker. You could see the love for each other in their faces.

Our thoughts and prayers go out to the Mitchell family as they mourn the loss of this wonderful woman.

Christmas Traditions

Last year, a few weeks before Christmas, I began researching various Christmas Traditions in hopes of adopting a couple myself. From exchanging matching pajamas to opening one gift on Christmas Eve, to giving the children their own ornaments each year representing them at that stage in their life ... there were so many to choose from! Of course, I wanted to do all of them, which just left me feeling exhausted, worn out and missing half of my to-do list. This year, we will again attempt to have the whole family sleep in the living room around the Christmas tree. This was somewhat of a challenge in 2008 with a 3-year old and a 1-year old. However, this year both children will sleep in the living room, and I am almost positive there will be little sleeping done. In addition, we'll eat traditional tamales with chili and queso before we attend Christmas Eve service and then it's off to look at the light display in Montgomery, TX. It is definitely worth the drive, even if you live in Houston. We will get home late, the children will be hopped up on sugar and we will fall onto the floor/couch/air mattress and watch Miracle on 34th Street until any, and all of us, fall asleep.

Avoiding Chapped Skin This Winter

Cooler weather means changing up your skin care routine. Dry air outside, coupled with running heaters indoors, can leave skin cracked, irritated and dull. By making a few, simple adjustments you’ll be sure to have glowing skin throughout the holiday season.

Start by re-evaluating your facial moisturizer. Because our skin loses water and natural oils during the dry, winter months, it’s best to use an oil-based moisturizer. Richer skin-care products form a natural seal over the skin’s surface to prevent water loss.

Two other causes of moisture loss are hot showers and bubble baths. Turn down the water temperature and discard harsh, lye-based soaps. Instead look for soaps containing cocoa butter, oil and oatmeal.

In fact, you can rev-up dull skin by making your own oatmeal body-scrub at home. Combine one mashed avocado with one teaspoon of sunflower oil and a cup of dry oatmeal. Apply the mixture to your skin and rinse. These natural ingredients gently exfoliate and nourish dry skin in one step.

Don’t forget to pamper your hands and feet. Use lukewarm water when washing your hands to prevent chapping and keep hand cream readily available. Heavier ointments and creams that contain natural humectants such as glycerin or petroleum are perfect for the winter season because they create a lasting barrier to prevent moisture loss. Any vegetable-based oil you find in your pantry can be used all over to soothe dry, itchy skin. To avoid that greasy feeling, apply ointment moisturizers in small amounts and rub into the skin thoroughly.

Pumpkin Bread French Toast

Pumpkin Bread French Toast

1 C Raisins
1/2 C Water
1 C Pumpkin (15 oz)
2 C Sugar
4 Eggs
1/2 C Baking Soda
1/4 Tsp Salt
1/4 Tsp Ground Clove
1/4 Tsp Nutmeg
1/2 Tsp Cinnamon
3 C Flour
2 Tsp Baking Powder

Soak raisins overnight in water.  Combine pumpkin, sugar, eggs, baking soda, salt and spices.  Beat for 3 minutes.  With wooden spoon or paddle on mixer, slowly add oil.  Add flour and baking powder.  Mix until just incorporated.  Fold in raisins and water.  Grease and flour loaf pans.  Bake in 325 degree oven for 35 to 40 minutes.

French Toast Batter

4 Eggs
1/4 C Heavy Cream
1/2 Tsp Orange Zest
1/2 Tsp Cinnamon

Whip together all ingredients.  Dip slices of pumpkin bread into batter and cook on medium heat pan or griddle until brown.  Enjoy!

The other day I bumped into a friend of mine in Houston. We talked about our daily grind and, at one point, the conversation turned to places to go for a quick, weekend getaway. Of course, I was all too willing to suggest The Woodlands for he and his wife.

Here are my Top 5 "couples" spots in The Woodlands:

#5. The bar at Américas Restaurant in Waterway Square. You'll think you're in New York when you step into this great nightspot. A terrific lounge environment with great music and fun, cabana-like chaise lounges.

#4. The Fountains at Waterway Square. Just steps from Américas, check out the Fountains for its night-lit synchronized water displays. A nice after-dinner treat.

#3. Town Green Park. Right across the street from Market Street, Town Green Park is a great midday spot for a picnic, to read a book or just to relax in the sun.

#2. Jasper's in Market Street. Outstanding cuisine (Executive Chef Kent Rathbun is an Iron Chef America winner and a four-time James Beard Award nominee) and a terrific atmosphere. If the weather is right, ask to dine on the patio.

#1. Crush Wine Lounge. Hundreds of superb wines and an amazing atmosphere have made this the nightspot in The Woodlands. Also offers a great selection of light appetizers . . . located in Waterway Square.

For Art’s Sake

Did you know The Woodlands is filled with 51 different pieces of public art available for viewing around major intersections, commercial areas, and in community parks? In fact, the city’s collection started in 1974 with “The Family,” a sculpture created by famed Texas artist Charles Pebworth located at Interstate 45 and The Woodlands Parkway.

Some folks driving by Lake Woodlands might think they’ve just spotted the Loch Ness monster but really it’s just the Rise of the Midgard Serpent. This slithering serpent is a whopping 35 feet long and 6 feet high.

A favorite with kids is Spammy, an adorable bronze pig riding in a wheelbarrow at Market Street. And if you’re strolling along the Waterway, keep your eyes peeled for nine Byzantine Glass Mosaic panels created by local artist Dixie Friend Gay. Each tiny square of glass is beautifully arranged to reveal a scene depicting wildlife such as birds, turtles, and frogs. Another of Dixie’s murals can be seen at George Bush Intercontinental Airport.

Kick It Up A Notch with Chef John Brazie

Growing up in Lenox, Massachusetts, Chef John Brazie became fascinated with the art of cooking after spending hours in the kitchen with his father. After working in several New England inns, John enrolled in the CIA – the prestigious, Culinary Institute of America. Upon graduation, he apprenticed under Chef Gerhard Schmidt … then spent time in San Diego and Aspen before traveling south to Texas.

When not directing the culinary operations at The Woodlands Resort, Chef Brazie enjoys entertaining family and friends in his backyard. He likes to rev up several blenders at once to concoct frozen drinks during the summer… especially his unique smoothies which feature unexpected ingredients like jalapenos, fish sauce, cucumbers and radishes to create a savory finish. A tip from Chef Brazie: use the outdoor grill instead of the oven to prepare crispy pizzas topped with amazing cheeses, meats, fruits and vegetables. The possibilities are endless!
