Dr. Pepper Pork

Did you know that the oldest Dr. Pepper plant in the world is right here in Texas? Check out the Dublin Dr. Pepper Plant. Oddly enough, I lived in Dublin, TX for a short stint in elementary school. Can't remember if I went to the plant or not though.
Ingredients
1 each Pork tenderloin
¼ cup Flour
2 tablespoon Vegetable oil
12 ounces Dr Pepper
1 cup Dried fig – dice
1 cup Onion – medium dice
Salt
Pepper
Directions
Preheat skillet on medium heat. Season whole pork tenderloin generously with salt & pepper. Dust in flour to completely coat. Add oil to skillet; then add meat. Sear for several minutes on each side to brown evenly. Reduce heat to medium. Add onions & fig. Saute until soft. Add Dr. Pepper. Cook until liquid has reduced by ¾ and is slightly thick. Remove pork loin and allow to rest for 10 minutes. Slice and serve with pan sauce.
